Via Cassia

Mile High Dining and family ate at Via Cassia in Hudson, New York. It’s one of the friendliest restaurants where I have ever eaten. One of the owners even greeted us at the Front door upon entry.

The three of us shared a kale salad and a cheese plate. We were allowed to taste three different red wines and select our favorite. The black Tuscan kale salad was good. While the three cheese plate was very good especially as the soft goat cheese was delicious.

Our main dishes, focused on pasta, rigatoni, Tonnarelli, and Orecchiette. I needed an Italian dictionary to explain the ingredients. My black squid ink Tonnarelli is prepared by kneading the black squid ink into the pasta dough then cooking it with lots of small scallops. It’s a good strong tasting pasta dish. The Orecchiette is concave shaped pasta, served with sausage, tomatoes, onions, and cheese. Lastly, the rigatoni had red onions and lots of pecorino cheese. It’s the only one of the three pasta dishes that I’ve tasted before.

For dessert, we shared a pistachio gelato, and I had an Italian grappa since we were walking home. Even the head chef came out to meet and talk with us.

My ratings are: It’s OK, Good, Very Good, and Excellent.

The verdict ⚖️ for Via Cassia is Very Good.
