Molino Chido

At a visit to the Stanley Marketplace, Mile High Dining enjoyed a snack at Molino Chido. It opened last fall and its owners Tommy Lee and Michael Diaz de Leon have a taco house gem. Mr. Lee’s other restaurants include Hop Alley and Uncle. While Diaz de Leon was the chef at Bruto when it earned a Michelin star. The restaurant focuses on the Molino room where the corn tortillas are prepared after a lengthy process.

I started with the extra spicy margarita. The spice prohibits you from drinking too many. The fish ceviche with a half plate of chips was good and soothing after the spicy margarita. The best dish was lengua, a bison tongue taco. The bison is from an eastern Colorado ranch and it is very tender. That’s a unique dish and with the small fries and a corn tortilla, it’s delicious.

My ratings are: It’s OK, Good, Very Good, and Excellent.
