Mile High Dining and friends visited downtown Golden to eat at Abejas Bistro. It’s located in a space previously occupied by a small grocery store. When Abejas remodeled, they created an industrial feel for the place such as an unfinished ceiling. The menu provides an American style selection of foods.
We shared the three starter plates of bread, beets, and scallops. The bread service with a side of butter and carrot jam was given the thumbs up. The smoked beets that I selected were served with Chèvre cheese and candied blueberries. It was very good as the small chunks of beets went down easily. The seared scallops with parsnips, fennel, and citrus were good, but not great. The scallops needed to be seared a touch more.
The two main entrées of pasta and ribs again were shared. The pasta with lots of cheese and tomatoes was good. The braised, short ribs with baked carrots and sunchokes were considered the best dish of the evening. The ribs with a demi-glacé were tender and delicious.
The restaurant is very noisy as the industrial setting doesn’t soften enough of the noise.
My ratings are: It’s OK, Good, Very Good, and Excellent.
The verdict ⚖️ for Abejas is Good.
