After attending the Holiday Music Festival at the University of Colorado in Boulder, Mile High Dining and friend had supper at the Ajax Tavern. The Boulder Limelight Hotel and the Ajax Tavern opened in August, 2025. The original Ajax sits at the base of the Aspen ski Mountain, Aspen, Colorado. The Boulder location features local food ingredients, local beers, and regional wines.
After a so-so cocktail, the food was much better. The shared cauliflower gratin provided a good taste to the routine flavor of cauliflower. I had the butternut ravioli which had a roasted squash filling and lots of wild mushrooms. It was a good dish, but my friend’s seared black cod with peppers and tomatoes was the best dish of the evening. The cod was very light and flavorful. We also shared the roasted carrots, which were a very good side dish. Lastly, we enjoyed the very friendly service.
My ratings are : It’s OK, Good, Very Good, and Excellent.
The verdict ⚖️ for the Ajax Tavern at the Limelight Boulder is Good.
