Mile High Dining enjoyed a week of playing golf in Las Vegas and splurged one evening for a dinner at the Vetri Cucina. It’s located at the Palms resort on the top 56th floor. A great view of Las Vegas is provided after you walk through the maze of casino machines on the main floor.
We shared a plate of oysters to start. A delicious sauce of minced shallots, peppers, and vinegar provided a great warm day taste.
My spring salad with the thinly sliced asparagus and lemons was light tasting. It’s a good match after playing golf in the 90° heat. The other golfer had the stuffed squid. The stuffing was chorizo, which is a spiced pork with a side of olives and baby squid was rated excellent.
My main dish was the crab stuffed cannelloni covered with trout roe and chives. A good delicious summer dish. The mint pappardele with mushroom ragu was dark green in color and had a great taste.
My only complaint was that we asked for ice water, but none was delivered. I had to ask the second time as we were very thirsty after being out outside all day. Otherwise, everything else was very good.
My ratings are: It’s OK, Good, Very Good, and Excellent.
