Bramble & Hare

Off to Boulder to dine at Bramble & Hare, recipient of the 2024 Michelin Green Star award. It’s the largest farm-to-table operation in the US. The owners not oversee the restaurant but they have a 425 acre farm with over 400 pigs and sheep and 25 varieties of vegetables.

As for food, its a three-course menu. I opted for 2 appetizers and the main entree. The marinated beets with oranges not only had good presentation but tasted great. The other appetizer was gnudi which is cheese and wheat combination to copy potato gnocchi. It was large enough to be an entree.

The entrée was winter squash risotto with a side dish of vegetables from the farm. The underlayment of honey nut squash was excellent in flavor. Next time, a bowl of honey nut squash and the frico would be my favorite.

My ratings are, It’s OK, Good, Very Good, and Excellent.

The verdict ⚖️ for the Bramble and Hare restaurant is Good.
