Mile High Dining ate at Ajax not in Aspen Co. but in downtown Denver. Ajax Downtown, like its sister restaurant in Aspen, is a lively tavern. Downtown specializes in local meats and fish grilled over the flames of a live fire.
We sat in the bar/lounge area at a high top with lots of windows to watch all the people walking by outside. As for food we had the corn tart and simmered mussels paired with orange wine.
The corn tart had charred corn with goat cheese mousse in the tart shell. Definitely, a delicious summer treat. The simmered mussels with bread, tomatoes, fennel, small onions, and pork belly was maybe the best mussel dish in town. A favorite staff member paired it with the tart orange wine.
My ratings are: It’s OK, Good, Very Good, and Excellent.
The verdict ⚖️ for Ajax Downtown is Very Good.
