Sap Sua

Mile High Dining was finally able to make a reservation at the popular restaurant, Sap Sua. It was featured in the Bon Appetit magazine as one of the 8 most anticipated restaurant openings in the summer of 2023. Sap Sua is operated by a husband and wife team who relocated from Los Angeles to Colorado recently. The menu is “non-traditional”Vietnamese. One of the dishes I had was a grilled head of cabbage!

I enjoyed three dishes, Hamachi, shrimp, and cabbage. First, was a mock cocktail of lemon and ice. A good start.

The small bowl of Hamachi Crudo, had dill, turmeric, and shrimp (mam tom). The sauce saves the fish.

The shrimp cake with trout roe, and lots of lettuce and mint was the best dish of the evening. The delicious sauce was the highlight as you could dip both the shrimp and lettuce into the sauce and enjoy the taste.

The charred cabbage with anchovy breadcrumbs and egg yolk sauce is overwhelming in size. The cabbage was good after you mix it with the sauce. I needed a shot of Mezcal to finish a half-head of cabbage.

My ratings are: It’s OK, Good, Very Good, and Excellent.

The verdict ⚖️ for Sap Sua is Very Good.
