Golden Moon Distillery

Mile High Dining took a class through the University of Denver on distilling spirits. It was conducted at the Golden Moon Distillery. Although we did not get to make any spirits we learned about the history of hard liquor and how it is made. Golden Moon is a small craft distillery that produces a range of hard liquors from whiskey to gin.

The process of creating spirits starts with a grain or a sugar product and they are fermented. The mash product then is heated in a still and the vapor is collected. This vapor is alcohol. Gin and vodka are generally the quickest to process as they are the first batch. Whiskeys are then processed again by adding different enzymes to add flavor and color.

The best part of the program was the tasting of different whiskeys. Some were very strong and others were milder. I will have to wait for colder days and snow to enjoy a whiskey. Please remember you are allowed to make wine or beer at home but not spirits!
