Best Vegetable Dishes of 2020

Mile High Dining has selected the 4 best vegetable-forward dishes of 2020. Highlighting some great smaller plates from this year and trying to improve our eating habits.

Quality Italian has a spicy crab and avocado salad with marinated tomatoes. The large pieces of spicy crab are softened with the avocadoes. It was large enough for three servings

Maine Shack had a beet salad. It was called Old Orchard beet salad with mixed greens, roasted beets, goat and gouda cheeses, toasted pumpkin seeds, and topped with a vinaigrette. A slightly bitter greens and the earthy beets were excellent.

The Barolo Grill’s eggplant parmesan was a new dish for Mile High Dining and make a big impression. The eggplant is lightly breaded and fried. It was presented on top of spaghetti. A very good summer dish.

The Logan Street restaurant had a simple dish of grilled asparagus. They were topped with a truffle parmesan sauce. Simple and delicious.
