Carboy Winery

Carboy Winery is located at the corner of 7th and Logan Street, Denver, Colorado. It is part of a city block transformation that includes a wine bar, winery, bottle shop, IVY on 7th Restaurant, and the Logan Restaurant. It replaced several shops including the 42 year old institution, Governors Park Tavern.

For our visit, we had two food boards, baked goat cheese, two little desserts, and a few glasses of wine-Pinot Noir and a Cabernet. Carboy sources the grapes from various places in the western United States and does the winemaking primarily at its plant on South Santa Fe.

The food boards were the Red Rooster and Andre the Giant. The presentation of the cheeses, meats, and many types of vegetables were excellent. Each were very good on taste and selection. The best item was the Baked Goat Cheese and Figs with toasted baguette bread. Delicious!

The desserts are simple one person serving and only $3. We had the Buttermilk Cake and the Chocolate Creme. Both were Great values and good tastes.

Back to the wine. Sadly, both the Pinot and Cabaret were lacking in favor and were just OK. One hopes after some more time the winemaking at Carboy will match the quality of the food.

My ratings are: It’s OK, Good, Very Good, and Excellent.

The Carboy Winery is rated Good.

The verdict would be Very Good if the wine improves.
